In general I like high-energy music but prefer that energy to come from a fast beat and hard-hitting lyrics rather than sheer volume. I like good, meaningful lyrics, and I like to be able to hear them over the music. I don't like screaming. While I won't reject a piece because it has a 30 second guitar solo, neither will I consider that to be a positive selling point, no matter how awesome the musician's mastery of zir instrument. In general I like to hear more instruments than just guitar and drums. Bonus points for including orchestral instruments and/or themes.
I like bands with a crisp, clear sound. That isn't mandatory, but it's always a plus.
Some examples of artists I have enjoyed in the past are: Melissa Etheridge, Bonnie Tyler, Alannis Morrisette, Mike and the Mechanics, Pink Floyd, Gino Vanelli, Heart, The Cars, The Alan Parsons Project, Fleetwood Mac, Steve Winwood and Berlin.
I've been scrolling through iTunes, listening to the 20-second clips of various songs. The clips are too short to render any kind of judgement on the lyrics, but the sounds of the following have caught my ear:

Muse: I don't quite know if they'll be a big hit or total disaster with you. My favourite of theirs is Knights of Cydonia and if nothing else, you should watch the video clip at least once.
Otherwise, I'm probably about the last person to be advising you, because I'm a fan of Gwen Stefani, Bjork, Natascha Atlas, and assorted hiphop and bollywood theme tunes. I think Gwen Stefani is the only one there'd be much chance of you liking.

I haven't been using the iPod touch for music but for video [I won and iPod shuffle last year and use that for all the audio because it's lighter to carry around].
There are cactusloads of wonderful free videos downloadable easily through iTunes. And rentals are $2.99 or $3.99 And I personally really like www.Fora.tv
At any rate, I'm glad you're enjoying your prize!
Oh, and if you drop it and break the glass it costs about $150, but you get a new machine.
